Increasing consumer awareness and demand regarding food quality, nutrition and safety issues coupled with intensifying competition within the rapidly changing food industry, has created a demand for individuals who are able to drive success in the management of key food chains in a modern global economic market.

Cranfield´s Food Chain Systems MSc has been developed as a result of extensive industry-led and market research. It represents a unique offering within the UK and Europe in that it examines the whole of the food chain from pre-harvest to market through the integration of science, technology and management, with the overall aim of enhancing the quality and safety of food.

The holistic approach of the MSc responds to the increasingly integrated food supply chain (`farm to fork´) and will equip you with the relevant knowledge, skills and practical experience needed to pursue the many opportunities available in today´s food industry.

The course is suitable for new graduates from a science or technology background who are interested in a career within the food industry. The course is also ideal for professionals already working in the industry who would like to train to further their careers. Available on a full and part-time basis the course offers flexibility and support for those who wish to train whilst remaining in employment.

"I decided to complete my Masters to further develop my understanding of food science, the food chain and to improve my employment prospects; I also wanted to undertake a course which would prepare me appropriately for a career in the food industry.

Food Chain Systems MSc covered many important and pertinent topics related to the food industry and we were encouraged to link these aspects together to form a wider concept of how the food chain is formed and what is involved in the manufacture and supply of food.

The modules were all enjoyable and I learnt a new skill from each. With the help of my supervisors the project provided me with the opportunity to focus my research into an area of particular interest to me. Another really fantastic part of the course was the opportunity to visit food factories including Giles Foods and Coca Cola.

On another note, the general experience at Cranfield was very enjoyable. With a mix of students from both Europe and outside of the EU, I found the year to be an all-round educational experience. I learnt a great deal about my fellow colleagues and there was a great sense of team work and group support throughout the course. Therefore not only have I obtained an MSc but have left with an extensive group of friends.

I conducted my project on the effect of everyday behaviours, (such as opening the door and cooling a body of warm water) on the internal temperature of the domestic refrigerator. I was interested in looking at the level of temperature increase and the time required for it to return to a stabilised temperature. I also conducted an experiment into the way Listeria monocytogenes responded to a sudden temperature increase after previous growth at refrigeration temperatures. The assistance from my supervisors was unfaltering and they both offered expertise in the different aspects of the project. They were always happy to discuss my work, offering feedback and they also encouraged and welcomed my own ideas which really helped me to develop my problem solving skills and scientific approach.

The support available whilst studying was very good. Academic and library staff were all very supportive and encouraged students to reach their full potential. Lectures and coursework were structured in a way which encompassed both individual and team thinking to develop thoughts and the application of skills gained. If I wanted to discuss a topic further or required clarification, the module lecturers were always happy to assist.

I have just been offered a technical position with a local food manufacturer and look forward to developing my career in the food manufacturing/processing industry."


Contents

The course is divided into three parts:

Taught modules

A formal taught component comprising ten modules, each of two weeks duration and consisting of one week of lectures, practical work, site visits and one week for private study.

* Nutrition and Health
* Postharvest Technology
* Food Supply Management
* GMP, HACCP and MRA
* Food Diagnostics
* Systems in the Food Supply Chain

Integrated component

This element brings together the major themes of the MSc, leading to a conceptual awareness of key aspects within the food chain. This element constitutes 10% of the overall mark. The marks are obtained from a written and oral assessment.

Research project and thesis

This elements constitutes the remaining 40% of the overall mark. The marks are obtained from a combination of a submitted thesis, application and initiative shown during the project which is assessed by the day-to-day project supervisor, and assessment of an oral presentation of the project.

The research project can be undertaken in industry or academia. It acts as a fantastic opportunity for you to meet potential future employers and practically apply your new knowledge.

Professionals following the part-time option normally carry out their project at their place of work allowing them to apply their training to solve a particular problem or investigation within their company - enabling them to make an immediate impact in their own environment.

Requirements

1st or 2nd class UK honours degree, or equivalent in a relevant discipline such as a food science, food technology, microbiology or science or technology related subject. Candidates with appropriate professional experience wishing to develop their careers are also invited to apply. Where applicable, students must achieve a minimum International English Language Testing System (IELTS) score of 6.5 or Test of English as a Foreign Language (TOEFL) score of 92.
