The International Master’s Degree Programme in Food Sciences (MScFood) educates international experts who will have outstanding scientific skills for research and development in the multidisciplinary area of food science. The Department of Food and Environmental Sciences organises the MScFood programme.

Food research at the University of Helsinki has been at the very peak of its field over the past decade according to Science Watch Magazine. The programme takes place on the Viikki Campus, one of the largest concentrations of biosciences in the world. Finnish food research and development benefits from a long tradition of food development having resulted in, for example, production of functional food ingredients such as stanol esters and probiotics. Also, Finnish food production has an excellent reputation in food quality and safety.

Food Science is the main subject with two elective tracks: Food Safety and Food Bioprocessing. Core studies in Food Science cover the chemistry and microbiology of food as well as Food Technology and Nutrition. The Food Safety elective track offers education regarding chemical and microbiological risks, administrative safety and risk assessment while in the Food Bioprocessing track three key areas are fermentation, bioseparation and enzyme technologies.

Minor subject studies are tailored to support the area of specialisation. The research-based teaching includes lectures, intensive courses, group work, practical training and laboratory work. Teaching is carried out in collaboration with other national institutes of higher learning and the food industry. The programme provides the student with an excellent basis for a career in the food industry, food safety and other regulatory authorities, as well as in research and doctoral studies.

Contents

The Master´s Degree Programme in Food Sciences (MScFood, 120 ECTS credits) consists of general studies (10 ECTS credits), major subject studies (86 ECTS), and elective studies (24 ECTS).

The major subject studies include core studies in Food Science ( Food Chemistry, Food Microbiology, Food Technology and Nutritional Science) and a choice of elective track: Food Safety or Food Bioprocessing. The students will choose the elective track during the first autumn term of studies.

Ensuring Food Safety is one of the key issues in food production. As the food sector is rapidly globalising the importance of safe food and management of risks have become factors affecting the wellbeing of the consumer. Improved methods are needed for detection of chemical and microbiological hazards, self control is established in the food manufacturing industry, and in addition to national level food authorities also European Food Safety Authority is dedicated to the area of food safety.

The elective track of Food Safety offers courses focusing on chemical and microbiological risks, toxicology, administrative safety, and risk assessment. The education will be completed with a choice of Master's thesis topic relevant to the area of food safety and a choice of elective courses or a minor subject study module further strengthening the area of specialisation.

Food Bioprocessing
The international challenge regarding Food Bioprocessing is to develop advanced techniques for improved utilisation of different plant and animal derived raw materials intended for production of high quality, safe, and health promoting foods. In the elective tract Food Bioprocessing the three key elements of education are fermentation, bioseparation and enzyme technologies. The education will be completed with a choice of Master's thesis topic relevant to the area of food bioprocessing and a choice of elective courses or a minor subject study module further strengthening the area of specialisation.

Finnish HEIs decide on their own quality systems, and the comprehensiveness, functioning and effectiveness of the systems are evaluated in the audits, which are valid for six years.
