The aim of this course is to educate students to a masters level in Food Microbiology, emphasizing areas in which UCC engages actively in research and to provide graduates with the knowledge and skills to enable them to contribute to the Irish and international food industries. The MSc in Applied Science (Food Microbiology) is replacing the existing taught MSc in Food Microbiology.
The main objectives of the programme are:
* To provide an advanced theoretical education and practical training in the area of Food Microbiology
* To have greater knowledge and understanding of current issues in Food Microbiology
* To be familiar with current laboratory research practice in Food Microbiology
* To be confident at integrating knowledge from different aspects of Food Microbiology and to formulate appropriate judgments on scientific research.
* Be able to survey scientific literature at a professional level.
* Be able to apply knowledge, understanding and problem-solving skills to practical issues in the food industry to work there at management level.
Modules will be chosen with the approval of the Programme Board depending on the students' background. Students who attain a pass (40%) across the taught modules, but do not reach the 50% threshold across four of the following five taught modules: MB4110, MB4111, MB4113, MB6014, MB6103, required to progress to research disseration will be conferred with a Postgraduate Certificate in Applied Science (Food Microbiology).
Similarly, students who pass the taught modules and do not wish to be complete the research dissertation may opt to be conferred with the Postgraduate Certificate in Applied Science (Food Microbiology).
The MSc Degree in Applied Science (Food Microbiology) is awarded to successful candidates after passing written examinations across all taught modules, the continuous assessment of practical work and a seven month research project (MB6007), which has to be written up in the form of a dissertation and approved by an external examiner.

* MB4111 Microbial Food Safety (5 Credits)
* MB4113 Food Biotechnology (5 Credits)
* MB6014 Hygienic production of Food (5 Credits)
* MB6103 Functional Foods for Health (5 Credits)
* FE6110 Food Markets and Policy (5 Credits)
You are normally required to take an English Proficiency Test if you come from a non-English speaking country.
Most European Universities recognise the IELTS test.
More informationCandidates must be holders of an honours BSc Degree, or equivalent qualification, in a discipline with a significant element of laboratory science, with a minimum of second class hours grade II or equivalent. However candidates with equivalent academic qualifications may be accepted subject to the approval of College. The number of places is limited and selection will be made on the basis of the candidate's performance in his/her primary degree or interview.
